Ingredients

2 center cut boneless pork chops
1 oz reduced fat feta cheese
3 wedges Laughing Cow Light Swiss cheese
1 shallot, minced
1/2 tbsp extra light olive oil
4 tsp Grey Poupon Dijon Mustard
1 oz lemon juice
1 tsp ground oregano
Directions
Preheat broiler with oven rack on 2d to top shelf.
Saute shallot in olive oil until transparent. Mix well with feta & swiss cheese.
Mix mustard, lemon juice & oregano & set aside.
Sprinkle salt & pepper to taste on both sides of pork chops. Slice one edge of the pork chop to form a deep pocket.
Stuff pork chops with cheese & place on rack of broiler pan. Cover one side of chop with mustard mix. Broil 8 minutes.
Remove chop from oven & carefully turn over. Coat other side of chop with remaining mustard mix. Broil another 7 minutes.
Be sure to check & make sure the pork is fully cooked! Serve immediately while hot.
*I used basil & sundried tomato feta cheese instead of regular feta. Added a bit more flavor. Yum!
