Ingredients

4 Tbls butter
1 medium onion, chopped
1 green pepper, chopped
1 cup of mushrooms, sliced
2 Tbls parsley, minced
1 clove garlic, smashed or cut finely
1 tsp salt
1/4 tsp pepper
1 cup chicken broth
1/2 water
1/3 cup marsala wine
1/2 cup heavy cream and 1/2 cup water if sauce is desired
1/2 cup flour
1-12 lbs of chicken breast, without skin
Directions
1. Melt butter and heat in a heavy skillet. Brown chicken until even on all sides.
2. Blend all vegetables with seasonings and chicken stock. Add to chicken. Cover and cook over medium heat for 10 minutes
3. Turn chicken; add water and wine. Cover and cook until chicken is tender, about 30 minutes. Turn once or twice during cooking. Remove chicken to heated platter.
4. Add cream and water to skillet and cook over medium heat for 3 to 5 minutes until sauce is smooth and well blended. Stir constantly.
5. Add chicken and serve.
