Ingredients

1 cup sugar
1/2 cup unsalted butter, softened
2 eggs
1/2 cup milk (I use skim)
2 cups flour
1 pint fresh blueberries
2 tsp. baking powder
1/2 tsp. salt
1 tsp. vanilla
decorative sugar (or demerara sugar)
Directions
Preheat oven to 350 degrees.
Cream the butter and cups sugar until light and smooth. Add the eggs, one at a time, beating well after each addition. Sift together the flour, salt and baking powder and add to the creamed mixture alternately with the milk. Crush 1/2 cup blueberries with a fork, and mix into the batter. Gently fold in the remaining whole berries.
Grease 12 muffin cups (or a large 6-muffin tin), including the surface of the tin. Fill generously with batter. Sprinkle sugar over the tops of the muffins, and bake at 350 degrees for 30 minutes, or until toothpick comes out clean.
Cool 30 minutes before removing. Store, uncovered, because the muffins are so moist.
Makes 12 regular muffins, or 6 giant muffins.
