Ingredients

    *Summer Squash, 2 cup, sliced (remove)
    Yellow Cornmeal, .50 cup (remove)
    Salt, .50 tsp (remove)
    *Canola Oil, .25 cup (remove)

Directions

Coat squash slices in seasoned cornmeal. Deep fry a few slices at a time, turning as needed until golden brown. Drain on paper towels.

Makes 4 (1/2 cup) servings

I usually put about 1 inch of oil in my iron skillet and after frying my squash it only took about 1/4 cup, so that is what I used for nutritional information purposes.
