    2 cups fresh diced Mango (generally 2 large)
    1/2 cup diced onion
    1/2 cup sweet pepper
    1 fresh jalapeņo, finely chopped
    2 tablespoons fresh chopped cilantro
    1/4 cup lime juice
    1 tablespoons cider vinegar
    1 tablespoon extra light olive oil


Mix all the ingredients and chill for an hour before serving.

Makes 6 servings 1/2-cup each
