This tangy chicken dish is simple and delicious. This tangy chicken dish is simple and delicious.

Ingredients

    4 skinless, boneless chicken breast cut in 1/2
    3 garlic cloves
    1 cup salsa
    Juice of 1 1/2 limes
    1/4 cup reduced-fat ranch dressing
    1 cup shredded reduced-fat Cheddar cheese

Tips

Serve over rice and beans with a side salad.


Directions

Coat a skillet with cooking spray. Place over medium heat.
Saute the chicken for three minutes per side.
Add the garlic.
In a bowl, mix the salsa, lime juice, and ranch dressing. Spread on top of the chicken. Cook another five minutes.
Sprinkle on the cheese, cover and cook until the chicken in no longer pink, about 4-5 minutes.

Makes 8 servings (1/2 breast each)

    Can't believe this has not been rated yet. Tried it with lemon juice, was good, but will also try with lime juice to compare. Why this hasn't hit Editors Choice, I can't imagine. This is DIABETIC FRIENDLY. - 4/15/07

    Okay so this is amazing!!! I didn't use cheese though I used black beans and added them to the pan when everything was simmering. Wow it is moist and soooo tasty!! Try it! - 4/20/09

    Easy to make and my whole family loved the dish. It is also good the next day. I would recommend not adding the cheese until you are ready to serve so that the cheese doesn't melt too much. I have already made this dish twice, that's how much we liked it. Thanks! - 7/2/09

    This was very good! The sauce is really great over Southwestern Beans and Rice too, and it makes GREAT leftovers! I will definitely make this again. My hubby liked it too. - 6/17/09
