Looking for my low carb recipes since my husband is doing low carb
Easy enough that I can make it, low carbs so my wife can eat it, and my very picky two year old loved it. All in all this recipe is a total keeper.
We sliced the chicken breasts into strips and put them in low carb tortillas and made them like fajitas. My picky husband thought they were good. He suggested next time adding some green chiles to spice it up
This was easy and delicious, and the whole family loved it.
I didn't have Ranch dressing so I used fat free plain Greek yogurt, and I laid 1 slice of reduced-fat Pepperjack cheese on each piece of chicken instead of using shredded cheddar.
Company worthy dish! I used non fat Greek yogurt with two tablespoons of dry ranch mixed in. I only used 1/2 of cheese. Delicious and easy. Low carb serve overv broccoli instead of rice.
Love this recipe, though I make a couple of changes. First, I pat the dry chicken breast with some reduced sodium taco seasoning. Then I grill it on a George Foreman grill till done, before putting it on a baking sheet. I spoon the salsa/ranch mix on top, then the cheese, and broil it toll melted.
Sorry, we didn't like this at all. Cooking with ranch is just not for our family. I used organic ranch with no sugar and it ended up smelling very sour.
I think it was the fat free ranch dressing....almost added a tangy sour taste to it that made it just not good. With regular dressing it might be ok.
I used light ranch dressing and zest of lime in the sauce along with the other ingredients. I did salt and pepper the chicken too. Made mexican rice and salad to go with. Incredible!!! Loved it, loved it! Very easy to make. Definate do over!!!
This is very good but I used regular Ranch dressing as I am doing low carb and the regular ranch dressing has less carbs than the fat free or Kraft Free. Very tasty and quick.
Fantastic taste! I used Walden Farm's Ranch Dressing (no fat, no calories, organic) and fat free cheddar cheese (which actually melted in the recipe) and topped with chopped cilantro. So yummy.
