Introduction

Ingredients

    1 small or medium onion, diced
    2 Tbsp. Olive oil
    1 15 oz. can of Tomato sauce
    2 14.5 oz. cans of low/no sodium diced tomatoes
    2 15 oz. cans of vegetarian kidney beans
    1 15 oz. can of black beans
    1 lb of ground chicken, cooked and drained
    2-4 Tbsp. of ground cumin (to taste)
    2-4 Tbsp. of garlic powder (to taste)
    2 Tbsp. dried basil (to taste)
    1 Tsp. Ground red pepper(to taste)
    1 Tsp. Red pepper flakes( to taste)
    Juice of 1 lemon......

    Optional: half a bag of frozen super-sweet sweet corn. You will need to add this to the nutritional information if you add it.

Directions

Makes six 1 1/2-cup servings.

Use a 4 quart stockpot. Add Olive Oil to stockpot and add onion, cook on medium until onions are somewhat translucent. Add cumin, garlic powder, basil, and stir together with onion. Lower heat slightly and let cook for 2 more minutes.

Add remainder of ingredients, and also add 2 cups of water. Correct seasoning, if need be. Simmer for an hour or two.

    a Hardy meal, but is much better with fresh cilantro, white corn = homony, and black or garbanzo beans .............be more authentic and healthier - 3/14/07
