Introduction
11/2 cups all-purpose flour11/2 cups Quaker Oats(quick or old fashioned,uncooked)
1/2 cup sugar ( baking with splenda )
2 cup fresh orange juice
1/4 cup oil (vegetable )
1 egg,lightly beaten
1 cup cranraisins
1/2 cup choped nuts ( pecan or walnut )
1 tablespoon baking powder
Heat oven to 400 F.
Spray medium muffin pan with cooking spray,Mix orange juice, oil, and egg in bowl set aside. In larger bowl mix dry ingredients, then add wet to the dry until moistened( might need to add a little more orange juice if to dry.
Fill muffin pan 3/4 full. Bake 18 to 20 minutes or until golden brown.Let stand a few minutes; remove from pan.
