Does best as a marinated salad, although it can be served right away

The original recipe also calls for 1/4 C. kalamata olives, but I do not use them. Nutrition information is without the olives

Number of Servings: 6

Ingredients

    4 fresh tomatoes, chopped
    1 cucumber, peeled & chopped
    1 yellow or green bell pepper, cut into 1/2" pieces
    1/2 C. chopped red onions
    1 T. red wine vinegar
    1 T. balsamic vinegar
    1 T. extra-virgin olive oil
    1 t. salt-free seasoning
    1 T. chopped fresh oregano
    1/2 C. feta cheese

Directions

Mix together vinegars, oil, salt-free seasoning, and oregano.

Add other ingredients.

Marinate several hours in refrigerator to allow flavors to blend.

Serve.
