Introduction

A delicious, lightly curried fish stew, (traditionally served in South India) that I learned to make at a Whole Foods cooking class. A delicious, lightly curried fish stew, (traditionally served in South India) that I learned to make at a Whole Foods cooking class.

Ingredients

    1 TBSP olive or canola oil
    1 Medium onion, chopped
    1 tsp minced garlic
    1 tsp minced ginger root
    1 medium tomato, cut into wedges
    1 lb of tilapia fillets (or catfish), cut into 3-inch pieces
    1/2 Cup of water
    1/4 tsp of turmeric
    1 tsp salt
    1/4 tsp cumin seeds
    1/2 cup of 2% milk or lite coconut milk
    1/4 tsp of vinegar or tamarind paste.

Directions

1. Heat oil in a large, deep frying pan or pot, on medium-low heat. Add onion, garlic, ginger, and jalapeno (cut the ends off of the jalapeno, and toss it in, whole). Cook until onion becomes translucent

2. Add tomato and cook until it begins to soften

3. Add fish. Cook for 4 minutes.

4. Add water, salt, turmeric, cumin, and gently stir.

5. Bring to a boil. Reduce heat to medium, cover, and cook for 10 min, until fish becomes flaky.

6. Add coconut milk and cook for 2 more minutes

7. Remove from heat; sprinkle in tamarind or vinegar. Stir gently
