Ingredients

    1 cup oats
    1 cup nonfat cottage cheese
    1/4 cup egg whites (whites from 2 eggs)
    1/4 cup skim milk, hemp milk, or light soymilk
    2 small bananas, 1 pureed into batter and one sliced and thrown in as pancakes are cooking
    1 tsp vanilla extract

Directions

Makes two servings, 350 calories, 27 grams protein, 11 grams fiber each.

Mix batter (hold the one banana) and pour by desired amount onto skillet. While the pancakes are cooking throw in banana slices.
