Introduction

This is a great summer recipe, for when fresh, sweet peaches are in season and available at your local farmer's market or grocery store! It's like a peach cheesecake tart, for less than 200 calories!

This can also be easily doubled, tripled, etc. to make multiples.

Add a scoop of vanilla flavored protein powder instead of the vanilla extract (and maybe a small splash of skim milk if it's too thick) to make a great breakfast tart instead!

Ingredients

    1 large fresh, ripe peach, peeled and sliced into thin slices
    2 oz. of nonfat cream cheese
    2 tsp. of Splenda (or other fake sweetner)
    1 tsp. of vanilla extract (or to taste)
    3 vanilla wafters, reduced fat

Directions

1. Start by peeling the peach and removing the pit (freestone peaches work best for this, but use what you've got!)
2. Slice the peach into uniformly thin slices, about 1/2 inch thick, and grill on a grill pan, electric tabletop grill, BBQ grill or just heat through until tender in a sauce pan. (Grilling works best and looks so pretty!)
3. Mix together the cream cheese, Splenda and vanilla extract, whipping it together until thoroughly combined and light and fluffy. (If it's too thick, add a splash of skim milk- not included in the nutrition info. Some brands of nonfat cream cheese mix better than others.)
4. Coarsely crush the vanilla wafers, until it's big chunks.
5. Layer the peach in the dish.
6. Pour the cream cheese mix over the top.
7. Let chill in the fridge for 15-20 minutes until the cheese mixture is set.
8. Just before serving, sprinkle the wafer bits on the top for a bit of crunch.
