This chicken salad is perfect for any occasion! It is creamy because it's ground in the food processor but has some bite because of the grapes and pecans. Not only that, it has a little kick because of the tabasco sauce. This salad is perfect for any time or place because of its quick prep time and low fat ingredients. Ingredients

1 Rotisserie Chicken (16 ounces)
1/2 cup Low Fat Plain Yogurt
1/2 cup grapes (halved)
1 stalk celery (chopped)
1 medium scallion
1/8 cup pecans (chopped)
1 tbsp miracle whip
1 tsp dijon mustard
1 tsp tabasco sauce
1 wedge lemon juice or 2 tsp.
salt and pepper to taste
Directions
To make the base, pull apart the rotisserie (throw away the skin and bones) chicken and put in food processor, along with scallions, yogurt, tobasco, miracle whip, mustard, and lemon juice. Blend until medium chopped, not mushy! The blending is optional, but i love it!
Then stir in celery, grapes, and pecans. Season with salt and pepper to taste.
If you don't like it creamy ,pull the meat into smaller chunks and chop the scallion. Instead of grapes, you can substitute with heirloom romatoes, apples, pineapple, or any fruit or vegetable you like. Toss the ingredients together for a chunkier salad.
Serve on crackers, tortilla, whole wheat bread, or pita.
