Ingredients

1 - 9-inch unbaked pie crust
2 cups shredded part-skim mozzarella cheese, divided
4 medium tomatoes, thinly sliced
1/3 cup thinly sliced Vidalia or other sweet onion
1/3 cup reduced calorie Caesar salad dressing
1/2 teaspoon dried basil leaves, or to taste
1/2 teaspoon salt, optional
Dash freshly ground black pepper, or to taste
Directions
Preheat oven to 400-degrees F. Bake pie crust 10 to 12 minutes until golden. Cool on wire rack.
Reduce oven temperature to 350-degrees F. Sprinkle half(1 cup) of the cheese on bottom of cooled pie crust. Top with tomato slices. Arrange onion slices evenly over the tomatoes.
Combine salad dressing, half(1/2 cup) of remaining cheese, basil, salt (if using) and pepper in a small bowl; mix well. Drizzle dressing over tomatoes and onions. Bake 35 to 40 minutes. Sprinkle remaining 1/2 cup mozzarella cheese over top of pie and return to the oven for 5 to 10 minutes more or until bubbly and golden.
The nutritional info is without added salt.
Whole fresh basil leaves layered in with the tomatoes works well also.
