Introduction

Ingredients

2.5 teaspoon low-cal margarine(Becel RSF)
1.5 cups mini marshmallows
1 teaspoon vanilla extract
3.5 cups of Special K Original cereal
Directions
Makes 12 servings
1) Spray a 9 x 9 inch baking dish with cooking spray.
2) In a large bowl, measure out margarine, marshmallows and vanilla extract.
3) Microwave on HIGH for 30 seconds. Make sure not to burn the marshmallows!
4) Stir the marshmallow mixture with a rubber spatula. Microwave more if it is not completely melted.
5) Add in the Special K cereal
6) Mix until well combined.
7) Transfer the Rice Krispie mixture in to the sprayed pan.
8) Flatten down with the rubber spatula. You may need to spray the spatula also because it will be very sticky.
9) Let cool for approximately 20 minutes.
10) Cut into 12 rectangles, about the same size as Kellogg's Rice Krispie treats.
Serve and Enjoy!
**Note: I've noticed that the Nutritional Information for Special K in Canada is different(lower cal) from the one in the U.S.A. Feel free to substitute original Rice Krispies cereal for this recipe**
