Introduction

I put together this recipe to use use some ingredients I had before I moved. The muffins are a little dense, but overall quite tasty. I put together this recipe to use use some ingredients I had before I moved. The muffins are a little dense, but overall quite tasty.

Ingredients

    5 ripe bananas
    1 cup flour
    1/2 cup oats
    1/4 cup butter or marg
    1 egg
    1/2 cup sweetener (or the equiv of 1/2 c sugar)
    1 tsp baking soda
    1/2 tsp salt
    1 tsp vanilla extract

Directions

Mash the bananas in a large bowl, then add the margarine, egg, sweetener and vanilla and mix well. In a smaller bowl, mix together the flour, oats, baking soda and salt. Mix the flour mixture into the banana mixture, and stir well, then divide into lined muffin pan. Bake for 30 min in a 350F oven.

Makes 12 muffins
