Ingredients

    1. One Pepito Whole Wheat Flour Tortilla ( cut edges to fit small frying pan)
    2. one whole egg
    3. two egg whites
    4. one slice Kraft 2% American cheese singles.
    5. 3-4 slices of fresh tomato (optional)
    6. Pam cooking spray

Directions

1. Crack the eggs and separate the egg whites into a small bowl. Whip with a fork. Add salt and pepper to taste.
2. Heat burner and spray on Pam.
3. Pour eggs into the small frying pan and immediately place the tortilla on top.
4. Cook on medium low for about 4 minutes.
5. Slowly lift up the edge of one side of your tortilla to check if the eggs are done. If they are, simply peel the tortilla ( with the eggs stuck on the bottom) of the pan and onto your plate with the eggs facing up.
6. Unwrap your cheese, shred it up with your fingers, and lay it out onto one side of the (egg side) omelet.
7. Now fold the omelet in half with the tortilla on the outside to make a burrito look-a-like.
8. Finally place the burrito back on the stove just until the cheese melts and then enjoy.
9. Serve with fresh tomatoes and O.J. if you like.

Makes 1 super yummy omelet.


* Also try mixing in some cottage cheese for an added protein bonus!

    Awesome idea! I tried this this morning with the exception of a few ingredients and I only used 1 egg and 1 egg white w/onions and some mexican cheese, it turned out pretty good! Thanks for the tip!! =) - 2/9/10

    This SO EASY to make it's ridiculous! I used salt, pepper and snipped fresh basil whipped in my egg whites for some extra flavor and shredded low fat cheddar cheese. There are endless spice combinations for the egg mixture and I'm going to try a bunch of them. Mexican tomorrow, ; ) Thanks its good - 9/21/09
