Ingredients
-
1 pound of raw ground turkey 93% lean
1/2 cup diced raw onion
1/4 cup Bread crumbs with garlic and spices
1 teaspoon of Chipotle peppers in Adobo sauce
2 oz. pepperjack cheese cut into 1/8 in. dice
1 teaspooon of salt
1 can condensed tomato soup
Directions
Combine all ingredients except the tomato soup. Either use a loaf pan or as I prefer, shape meat into a loaf shape and place in a casserole dish. Pour the undiluted soup over the meat and bake at 350 degrees for one hour. Yield is 4 servings for small appetites and 2 servings for bigger appetites.

I have issues with condensed soups...can I substitute with tomato paste or sauce? Never had cheese in a meatloaf before, should be interesting. - 10/5/09

Absolutely, be my guest. Although I wouldn't recommend tomato paste, it would lend too strong of a tomato taste. You would also save on the sodium count if you did that.
