Number of Servings: 6

Ingredients

    2 cups dry lentils
    4 cups water
    3 tbl garlic powder (or to taste)
    2 tbl onion powder (or to taste)
    4 tbl chil powder (or to taste)
    3 tbl ground cumin powder (or to taste)
    salt (to taste)
    12 regular taco shells
    1 cup 2% mexican cheese
    12 tbl light sour cream
    1 cup diced tomatoes
    3 cups shredded romaine lettuce
    1/2 cup hot sauce

Directions

Rinse lentil beans until clean. Place lentils and water in pan to boil. When boiling, add seasonings. Allow to boil for at least 30 minutes or until soft. Add salt to taste.

Preheat oven to 375 degrees. Place taco shells in oven until crisp. Remove. Place desired amount of lentils in taco shell. Top with lettuce. tomatoes, cheese, sour cream, & hot sauce!
