These offer a great alternative to oatmeal peanut butter chocolate cookies to those who are low carbing and gluten free!! Ingredients

* 2 Tbsp Natural Peanut Butter
* 1 Tbsp Smart Balance Butter
* 1/4 cup white chocolate chips
* 1/4 cup semi-sweet chocolate chips
* 2-3 tsp (pkts) Sun Crystals or cane sugar
* 1-2 Tbsp Unsweetened Coconut (shredded)
* 1/4 tsp Vanilla Extract
Directions
Put all ingredients into a bowl and microwave until soft enough to mix together (about 1-2 minutes).
Once softened, mix well and shape into little balls.
Eat right away for a fudge-like snack or refrigerate and store for later.
For less carb count, use different sweeteners.
Also, try them with a dab of peanut butter for an alternative to a Reeses Peanut Butter Cup. :)
