A quick, delicious summer treat! A quick, delicious summer treat!
Number of Servings: 6

Ingredients

    3 large peaches
    1 T salted butter
    6 t light brown sugar
    1 t cinnamon
    1 c chopped pecans
    3 c light vanilla ice cream


Directions

Melt butter in a large skillet on medium-low heat. While butter is melting, halve the peaches and remove pits. Place peaches cut side down in skillet. Cover and cook for 5 minutes. Turn peaches over and fill each hollow with 1 t brown sugar. Cover and cook another 5 minutes, or until cooked well. Remove from pan. Mix chopped nuts and cinnamon with butter/juices frm the bottom of the pan. Cool peaches and serve with ice cream. Top with nut mixture.

Makes 6 servings, 1 peach half and 1/2 c ice cream each.
