Introduction

A rich hearty soup that is not only guilt-free, but pantry friendly! A rich hearty soup that is not only guilt-free, but pantry friendly!
Number of Servings: 4

Ingredients

    2 15-oz can asparagus, drained and rinsed
    15 oz can new potatoes , drained and rinsed
    1 T Butter
    1 T Flour
    1/4 cup chopped onions
    1 Garlic, minced
    1 cup Chicken Bouillon
    salt, pepper and cayenne to taste

Directions

Melt butter in large saucepan
Add flour and onions and sweat onions with a pinch of salt until softened. Add garlic and sweat for 60 seconds.
Add drained and rinsed vegetables.
Allow to heat thoroughly, stirring often.
Add bouillon and seasonings and bring to a boil.
Allow to simmer for 2-3 minutes.
Puree mixture using a stick blender if available, otherwise using a food processor or standard blender.

Excellent served with whole grain bread on the side. Can be garnished with crumbled bacon if desired.
