Ingredients
-
2/3 cup minced onions
2 Tb butter
1/2 lb. sliced raw potatoes
14 oz. Hillshire Farms Lite Polska Kielbasa
3 Eggs
1.5 cups 1% milk
1/2 tsp Salt
1/8 tsp pepper
1/4 cup grated Swiss Cheese
1 Tb Butter
Directions
Preheat oven to 375 degrees.
Cook the onions slowly in 2 Tb Butter for five minutes or so, until tender, but not browned.
Drop potatoes in boiling salted water and cook for 6 - 8 minutes, or until barely done. Drain thoroughly.
Butter a 3-4 cup baking dish, 1.5 - 2 inches deep, such as an 9 inch pyrex pie plate. Spread half the potatoes in the bottom, then half the onions. Lay the sausage over them, the rest of the onions and then the remaining potatoes.
Mix the eggs and milk. Pour over the potatoes and shake to send liquid to the bottom.
Spread on the cheese. Dot with butter.
Bake for 30 - 40 minutes in the upper third of the oven until top is nicely browned.
