Ingredients

    1 14.75oz can Wild Salmon, with bones
    1/2 cup fresh whole wheat bread crumbs
    1 Large Egg, beaten
    1/4 cup finely chopped onion
    3/4 cup finely chopped celery
    1 Tbs. Lemon Juice
    1/2 tsp crushed rosemary
    1/8 tsp black pepper
    pinch cayenne pepper (this does not make burgers spicy, just adds flavor)
    1 Tbs vegetable oil

Directions

Makes 6 burgers

Drain and flake salmon and mix with beaten egg, onion, celery, lemon juice and spices. Fold in bread crumbs. (You can make them by putting a large piece of whole wheat bread in a food processor. The heel works well.)

Heat oil in a large skillet over medium heat and cook burgers for about 4-5min on each side or until golden brown and firm. Try not to move them around too much in the pan.

Serve over mixed salad greens with dressing of your choice.
