Introduction

I created this recipe after discovering Arnolds sandwich thins on Spark people. I don't think you can find a more satisfying or lower calorie pizza-like snack than this creation. Of course you can add pepperoni or sausage if you desire but the calorie count would be much higher. If you are really watching those calories, this pizza will satisfy the need for a good pizza flavored snack. I created this recipe after discovering Arnolds sandwich thins on Spark people. Ingredients

    Arnold brand sandwich thins, 1 roll
    1/2 cup drained diced tomatoes. I like Red Gold brand.
    2 oz. shredded Mozzarella

Directions

Drain the tomatoes well or your pizza's will be soggy.
Open the roll into two halves.
Divide the cheese into 2 portions
Spread one portion onto both halves and melt the cheese slightly in a toaster oven set on a medium heat.
Layer half of the tomatoes onto each half then divide the remaining cheese over the tomato and put back into the toaster oven until the cheese is melted and bubbly. Serving size is two halves of the roll.
