Ingredients

    Almond Paste 14oz
    Sugar 3/4 cup (can be changed to taste)
    Egg Whites 2
    Orange Zest from 1 large orange
    Pine nuts for topping

Tips

Dough is rather sticky try to keep hands moistened while rolling in the pine nuts. I used a tsp for my measurement.


Directions

Process almond paste until becomes finer consistency. Add the egg whites (while processing) and orange zest- mix until combined *about 20-30 seconds).
Roll dough into small balls and roll in the pine nuts til lightly coated and place on cookie sheet (with parchment paper), flatten slightly, and bake for about 15-18" at 350". May have to make time adjustments according to your oven.
Cookies should be springy to touch and lightly browned. Place on cooling rack and store when cooled.
Cookies should be soft and chewy and delicious!

Serving Size: Makes about 30 medium sized cookies
