Again, in the spirit of trying to use everything in my fridge before going shopping...here is what turned out to be a YUMMY breakfast scramble! Again, in the spirit of trying to use everything in my fridge before going shopping...here is what turned out to be a YUMMY breakfast scramble!
Number of Servings: 5

Ingredients

    5 diced red potatoes (used whatever - I got about 3 cups of diced potato)
    About half a cup diced tomatoes
    1 jalapeno, chopped up small
    1/4 cup diced onion
    2 finely chopped garlic cloves
    1 or 2 green onion stalks, chopped
    1/2 green bell pepper, diced
    1/4 cup shredded cheddar cheese
    3 eggs

Directions

Add oil to skillet, fry potatoes until they have passed the soft stage and are into the golden stage. Add onions and garlic, stir, and cook for a while longer. Pour mixture out onto plate with a LOT of paper towels and soak up extra oil. Put mixture back in skillet, and add rest of the veggies. Stir and cook for about 3 more minutes. Then, add the eggs and keep stirring. When you're done, top with cheese. Makes about 5 one cup servings.

    I think anything is good with eggs. I do the leftover thing all the time with whatever I have. I just happened to have your ingredience. I left out the peppers though. - 9/4/09
