Introduction

Ingredients

    2 pounds skinless, boneless salmon fillet
    1.5 tablespoon olive oil
    1 medium onion, finely chopped
    1.5 teaspoon fresh thyme leaves
    1/3 cup chopped red pepper
    5 large eggs
    1/2 cup mayonnaise
    3/4 cup plain non-fat yogurt
    1-1/4 teaspoon salt
    1-1/4 teaspoon freshly ground pepper
    1-1/2 cup breadcrumbs, plus 1-1/2 cup breadcrumbs for coating

Directions

1. Bring a large pot of water to a simmer, and place the salmon in it for 3 or 4 minutes, until cooked. Drain and cool. Break into chunks.
2. In a frying pan over low heat, combine the olive oil, onion, and thyme. Saute until the onion is translucent, about 5 minutes. Add the red pepper, and cook for 1 more minute. Cool.
3. In a large bowl combine the salmon, onion mixture and remaining ingredients, except the bread crumbs for coating.
4. Preheat oven to 450 degrees. Put half of the remaining bread crumbs in an 13" x 9" x 2" baking dish, lightly sprayed with cooking oil. Press the salmon cake mixture into the dish, then top with the remaining bread crumbs. Bake for 20-25 minutes.

Makes 12 servings, each about 3" square.

    I'm just wondering wether or not you can use canned salmon? I'll try that first and see if it turns out ok. Sounds good. I don't always like frying salmon. - 8/13/09
