Introduction

Ingredients

225 grams of large pasta, rigatoni or penne or shells
1 tblsp olive oil
1 pound (454 grams) Italian sausage
1 small onion, chopped
4 cloves of garlic, minced
1 small green pepper, in thin strips
1 large zucchini, chopped
2 large tomatoes, chopped
salt and pepper
1/4 cup grated cheese
Directions
Cook the pasta according to directions, and let sit in the hot pasta water if it is finished cooking before you finish with the rest.
Meanwhile, heat the olive oil in a large non-stick pan.
Remove the sausage meat from the casings, break it up and brown in the oil. Add the onion to soften, then the green pepper. Add the garlic, zucchini and tomato. Season with salt and pepper. Let it all soften, then add 1 cup of the pasta water and bring to a boil.
Remove the pasta with a slotted spoon from the water, and put it into a large shallow casserole dish. Spoon the sausage vegetable mixture over top. Sprinkle with cheese. Cover with foil and cook at 350 F for 30 minutes, then remove the foil and cook for another 30 minutes.
Serves 8.
