Ingredients

    10 egg beaters
    1/4 cup milk (organic/skim)
    1/4 teaspoon black pepper
    cooking spray
    1 large onion, diced and cooked
    2 cups chopped tomato
    1 cup fresh spinach
    1/2 cup salsa

Directions

Preheat over to 300 degrees
Combine egg beater, milk and pepper

Spray large non stick skillet with cooking spray. Saute onion 5 minutes
Add chopped tomatoes and spinach and saute 10 more minutes, stirring frequently

Transfer veggies to egg mixture and combine thoroughly
Pour into a lightly oiled glass pie plate and bake for 15 minutes or until eggs are set

Cut into 4 wedges and serve with 2 TBS Salsa
