Ingredients

    2 Skinless and boneless chicken breast, butterflied and cut in half
    Sea Salt & Fresh Ground Pepper
    All-purpose flour for dredging
    5 Tablespoons Olive Oil
    1/3 cup fresh lemon juice
    1/2 cup chicken stock
    1/4 cup brined capers, rinsed
    1/3 cup fresh parsley, chopped
    1 pat of Salted Butter

Directions

Season chicken with salt and pepper. Dredge chicken in flour shake off excess.

In a large skillet over medium high heat add 2.5T of oil. When oil is hot add 2 pieces of chicken and cook for 3 minutes. When chicken is browned, flip and cook other side for 3 minutes. Remove and transfer to plate. Add 2.5T olive oil when hot add the other 2 pieces of chicken and brown in the same manner. Remove pan from heat and chicken to plate.

Into the pan add lemon juice, stock, and capers. Return to stove and bring to a boil, scraping up brown bits from the pan fro extra flavor. Check for seasoning. Return all the chicken to the pan and simmer for 5 minutes.
Remove chicken to platter. Add pat of butter to sauce and whisk vigorously. Pour sauce over chicken and garnish with parsley.

    I made the recipe for me and my son as we are truly fans of all sorts of chicken dishes. This one however, was a bit disappointing. It was extremely tangy and neither of us cared for the flavor. This is one we won't be repeating. - 9/9/09
