Smart Balance, Smart Balance Light Buttery Spread, .5 C
Sweet Dreams Brown Rice Syrup, 1 C Egg, fresh, 2 large
Pure Vanilla Extract, 1 tsp
Quaker Old fashioned Oatmeal, 1.5 cup
Whole Wheat Flour, 0.75 cup
Raisins, .5 cup, packed
Walnuts, 1 cup, chopped
Unsweetened Coconuts Flakes, .5 C optional
Sea Salt, .25 tsp
Baking Powder, .5 tsp
Cinnamon, ground, 1 tsp
Directions
Preheat oven to 350°. Line two large cookie sheets with parchment paper.
In a medium bowl or processor, whip Smart Balance until creamy. Add Brown Rice Syrup, eggs, and vanilla, beating well (about 3 minutes).
In a second medium bowl mix together oatmeal, flour, raisins, walnuts, coconut, salt, baking powder, and cinnamon.
With a wooden spoon, stir the oatmeal mixture (optional unsweetened coconut) into the Smart Balance combination until moistened. You will use two teaspoons to form dough balls. Drop dough onto baking sheets in mounds 2 inches apart.
Bake both sheets on upper and lower racker for 12-15 minutes until golden. After 7 Minutes switch the top sheet with the bottom sheet to ensure even cooking. Let cool at least 20 minutes before peeling cookie from parchment paper.
Serves: 24
