Cheese Latkes (ricotta pancakes)
Simple and easy, this recipe is high in protein and fits in with my diabetic/no refined white diet. The cholesterol can be cut by using an egg substitute. I use a fruit only jam for the topping. I make the whole recipe and use the leftovers for breakfast the next day.
