Introduction

I started to make cottage cheese pancakes, but was a little short, so I filled in with some ricotta and the texture was great! It adds a few more calories, but reduces the sodium. Ingredients

    1/2 c. whole wheat flour
    1/2 c. white flour
    1/2 t. baking soda
    1 c. nonfat milk
    1/2 c. cottage cheese
    1/2 c. ricotta cheese
    2 eggs
    1 T. honey

Directions

Mix flours and baking soda in a large bowl. Mix in milk, cheeses, eggs and honey. Mix until batter is combined. Use a 1/3 c. measuring cup to drop onto hot griddle sprayed with cooking spray and cook on first side until small bubbles appear. Flip and cook on remaining side just until firm. Makes 4 servings of 3 pancakes.
