Ingredients

1 large egg
1 teaspoon maple syrup
1 teaspoon canola oil
1 tablespoon plus 1 teaspoon white flour
3/4 teaspoon baking powder
Sprinkling of cinnamon or nutmeg
Dash of salt
1/3 cup of fat-free ricotta cheese
Directions
Stir the egg mixture into the flour mixture. Some lumps should remain. Stir in the ricotta cheese so that it is incorporated into the batter.
Pour into pre-heated, oiled cast iron or heavy skillet. When bubbles appear, flip. Cook a minute or less and place on plate.
Top with natural applesauce, jam or other topping.
You can substitute 1/4 tsp vanilla for the maple syrup.
Serving Size: Makes two pancakes
