Introduction

Number of Servings: 12

Ingredients

    Water, 5 cups
    Black Eye Peas, Dry, 1 lb bag
    1 Medium Onion Diced
    2 Cloves of Fresh Garlic Diced
    Cayenne Pepper , .5 tsp
    Ground cumin, 1.5 tsp
    Black Pepper (Gound), 1 tsp
    Bay leaf, whole, 2 serving

Directions

Sort and Rinse Black Eye Peas. Place all ingredients in the crockpot. Stir and cover. Cook on low for 6 - 7 hours. Remove bay leaves before serving. Makes 12 half cup servings.

**Note: Traditional Black Eye peas get their flavor from ham hock. The amount of spices I have suggested are enough to give the peas flavor and kick, but still mild enough for my children. These spices can be adjusted to suit your taste. There is no salt added to keep these low sodium.

    I'm a purist, so I only seasoned with salt and pepper. I did add the onion and garlic as well. Very good. Serve with fresh collard greens and cornbread for a complete meal of pure comfort! - 9/20/11

    I love black eye peas and my Husband and I ate this over and over until it was all gone! I did add chicken bullion cubes (2) to add a bit more flavor. A keeper in our house. :) - 2/13/11
