Ingredients

    3 very ripe medium bananas
    1 large egg
    1/3 cup milk or buttermilk
    1/2 cup splenda
    1/2 cup packed brown sugar
    1-1/2 cups flour
    1 teaspoon baking soda
    1 teaspoon salt
    3/4 cup chocolate chips

Directions

Preheat oven to 350.
Lightly coat 18 muffin tins with cooking spray.
In large bowl, mash bananas with fork.
Wisk in egg, milk, splenda, and sugar.
In separate bowl, combine flour, soda, and salt.
Add flour mixture to banana mixture and mix well.
Fold in chocolate chips.
Spoon batter into muffin cups.
Bake 25 minutes or until toothpick inserted in center comes out clean.
Allow to cool slightly and remove to wire rack.

    This was very tasty. I used a little more brown sugar and a little less Splenda (I'm not a big fan of Splenda). I used half whole wheat flour and half white flour. I also added a few chopped walnuts. Overall, these muffins were very tasty. - 4/27/08

    I made these with skim milk and used 1/4 C. sugar instead of Splenda. My five year old niece and Dad thought they were great! - 3/18/08

    These muffins were great, and easy to make. It was my first batch of muffins. I used the Splenda Brown Sugar Blend to cut on the carbs a but, and I used Semi-Sweet chocolate chips. ANyways I loved it! great recipe! - 8/23/07
