Introduction
This is THE only banana bread/muffin recipe I use. I usually add more bananas because I like it moist, and a little bit more vanilla. It's best made into muffins. Ingredients

3 mashed Bananas (or more)
1/2 cup softened Butter
1 cup Sugar
2 Eggs
2 cup Flour
1 tsp Baking Soda
dash Salt
1 cup pecans (if desired)
# Vanilla Extract, 1 tsp
Directions
Makes 12 muffins or small loaf. This recipe can be easily doubled.
Preheat oven to 250 degrees.
Line muffin tin with liners (or if making a loaf, spray loaf pan)
Cream butter and sugar until fluffy.
Add eggs and bananas, and mix well.
Combine dry ingredients and stir into banana mixture until moist.
Stir in pecans and vanilla.
Spoon batter into muffin tins (or pour into bread pan).
Bake at 250 degrees for 1 hour or until knife comes out slightly moist and sticky.
If you prefer, you can cook longer; but I prefer them more moist. I usually set my timer for 45 minutes, check it, and then keep cooking and checking until done.
Bread will cook more on the outside than the inside, which is why I prefer making them into muffins.
