Ingredients

    1/4 cup red lentils
    1/2 cup water
    1/2 cup reduced-sodium chicken or vegetable broth
    1 tsp olive oil
    2 garlic cloves, chopped
    2 c chopped kale
    2 lemon wedges, juice for flavor
    salt and pepper as desired

Directions

Rinse the red lentils before cooking. Add lentils, broth and water to a sauce pan, bring to a boil, cover and let simmer on Low for 30-45 minutes, depending on your desired consistency, adding additional water as needed. For this recipe, longer is better.
Clean and rinse the kale, cutting out the stems, and chop approx. 2 cups worth. Chop the garlic. When the lentils are done, put them aside. At that point, add the garlic and olive oil to a sautee pan on Medium, add the kale and sautee until wilted. Add the cooked lentils, and fold into the kale slightly. Remove from heat, add the juice of a lemon wedge for each serving, and salt and pepper to taste, to your liking. Makes 2 hearty servings... Enjoy!

    Taste: really good, I didn't think it needed any adjustments to the recipe.
    Serving size: not sure why this is deemed 'hearty'. I followed the recipe to the letter, and I ended up with less than 1 cup total, so two very small servings. I had planned it as my lunch, and it was definitely not a meal

    Very Good
    I added some Hot Curry, Turmeric, Granulated Garlic, Onion Powder and Sailor Lemon Salt to jazz it up a bit. Yum! - 3/23/13

    I don't know how to do the rating right -I meant to rate it very good! This recipe was very easy to follow - I times it by 4 to make 8 servings. I have a ton of fresh kale in my garden.
