Ingredients

    75g / 3oz / 6tbsp unsalted butter
    75g / 3oz / 6tbsp caster (superfine) sugar
    75g / 3oz / 6tbsp soft light brown sugar
    1 large (extra large) egg
    ½ tsp vanilla extract
    150g / 5oz / 1¼ cups self-raising flour
    25g / 1oz / ¼ cup cocoa powder
    ¼ tsp salt
    100g / 4oz chocolate chips

Directions

Pre-heat oven to Gas Mark 4 / 180C / 350F and line 2 baking sheets with parchment.
Cream the butter with the sugars until pale and fluffy.
Beat in the egg and vanilla extract.
Sift the flour, cocoa powder and salt over the mixture and fold in.
Stir in the chocolate chips.
Place four heaped tablespoons of the mixture well apart on each baking sheet.
Spread the mixture with the back of a wetted spoon and bake for 12 minutes, until risen and set.
Leave on the sheets for a minute to firm up, then cool on a wire rack. Repeat with the remaining mixture.
