Introduction

OMG My husband (who HATES! Indian Food) Loved this! LOL Of course he has NO IDEA this WAS "Indian Food"! I took a traditional Palak Paneer and added additional spinach and chicken and served over rice! This is QUICK! EASY! and Oh so Filling! OMG My husband (who HATES! Indian Food) Loved this! Ingredients

    1 BOX Trader Joes, Indian Fare "palak paneer" flavor.
    1 box frozen chopped spinach(10oz)
    1/2 cup water
    12 oz cooked diced chicken( I used the precooked kind)
    1 cup long grain basmati(cooked with 2 cups water and salt to taste)

Directions

Rinse rice 2 times- place in pot with 2 cups water and salt to taste. Bring to a boil over high. Reduce heat to med and cook until liquid is just even with top of rice. Stir well once- cover- and turn off burner( leave ON the warm burner) Rice will be done in 15 minutes,

Meanwhile. bring 1/2 cup water to boil in large pan with lid. Add frozen spinach and cover- allowing spinach to thaw and cook. About (8 minutes) Place palek pouch on top of spinach to heat and add diced chicken. WHen ready to serve(about 4 minutes) Cut palak sauce pouch open and pour over spinack and chicken- mix well. Fluff rice and serve with Chicken Palek on top!

Makes 4 servings. (1/2 cup rice figured into calories...if you have more...make sure you adjust accordingly!
