    * *Flour, white, 4 cup
    * Baking Soda, 3 tsp
    * Cinnamon, ground, 1.5 tsp
    * Nutmeg, ground, .5 tsp
    * Salt, .25 tsp
    * Egg, fresh, 2 large
    * *Canola Oil, .75 cup
    * Applesauce, unsweetened, 1.5 cup
    * Granulated Sugar, 1 cup
    * Brown Sugar, 1 cup, packed
    * Vanilla Extract, 1 tsp
    * Zucchini, 1 cup, shredded
    * Apples, fresh, 2 cups shredded


Mix dry ingredients in a lg bowl. Blend eggs with a mixer until frothy. Slowly add oil,applesauce, sugars, and vanilla beat until well blended. Mix in dry ingredients spoonfuls at a time just until moistened. Fold in apples and zucchini. Divide by approx 1/4 c full to muffin tin sprayed with pam. Should make about 26 big muffins!

Bake 350 for 20 minutes or so.
