Ingredients

    2/3 cup no calorie sweetener
    1 tbsp and 1 tsp unsweetened cocoa powder
    2 tbsp and 2 tsp milk
    2 tbsp 2 tsp i can't believe it's not butter light
    1/4 tsp vanilla extract
    1/3 pinch salt
    2 tbsp and 2 tsp creamy peanut butter
    1 cup quick oats

Directions

1. In a saucepan over medium heat, combine the sweetener, cocoa, milk and i can't believe it's not butter light. Bring to a boil, stirring occasionally. Boil for 1 minute, then remove from heat and stir in the vanilla, salt, peanut butter and oats.
2. Drop by rounded spoonfuls onto waxed paper. Allow cookies to cool for at least 1 hour. Store in airtight container.
Makes 12 cookies.

    This sounds awesome! I'm a big fan of the usage of rolled oats in cookies, and peanut butter + chocolate is always a favourite, so I'm definitely going to be trying this out sometime soon! Thanks for sharing! :D - 6/15/12
