Introduction

Ingredients

    1 1/2 C whole wheat flour
    3/4 C Flax seed meal
    3/4 c oat flour
    1/2 c brown sugar
    1/2 c vanilla protein powder
    2 tsp baking soda
    1 tsp baking powder
    1/2 tsp salt
    2 tsp vanilla
    1/2 c shredded apples
    1 c shredded carrots
    1/2 c raisins (or other dried fruit)
    1 c sliced almonds
    1 c skim milk
    1/3 c honey
    2 egg whites
    1 tsp almond extract
    1 c coconut (optional)

Directions

Mix all dry ingredients in large bowl. Add carrots, apples, nuts, almonds, raisins and coconut and toss together. In separate bowl, combine remaining ingredients. Gently fold wet ingredients into dry ingredients until just moistened (do not over mix). Drop into prepared muffin tins (greased or with muffin cups). Bake at 350 for 15-18 minutes.
Makes 24 medium sized muffins.
Note: nutrition information includes coconut and will vary slightly depending on what kind of protein powder is used.
