Ingredients

    *Country Crock LIte Shed's Spread 39% Veg Oil, 8 tbsp
    * Egg, fresh, 2 medium
    * Vanilla Extract, 1 tsp
    * *Flour, white, 2 cup
    * Baking Powder, 1 tsp
    * Cinnamon, ground, 2 tsp
    * Applesauce, unsweetened, 1 cup
    * Raisins, .5 cup (not packed)
    * Baking Soda, 1 tsp
    * Nutmeg, ground, .25 tsp

Directions

Soak raisins in hot water five minutes.
Cream margarine, eggs and vanilla, beat. Add applesauce and mix. Add dry ingredients and mix well. Add drained raisins. Pour into greased loaf pan and let stand 20 minutes. Bakes 350 degrees for about one hour or until done. You may add nuts but also add nutrition. Serve warm or warm before eating. Cut into 12 slices.
