Introduction
This is a remake of the Olive Garden Zuppa Toscana. It is probably one of my all time favorite soups. I love to go to Olive Garden for soup, salad and breadsticks. I have switched out the high fat pork producs with turkey sausage and turkey bacon. I have also reduced the cream content, because after I made this the first time, it was almost too creamy with 2 cups of heavy cream. The good new is you can add a much kale as you want and get a good dose of greens with this soup. It has all of the elements of a balanced meal. Another tip, if you wish to remove some sodium, take out the turkey bacon. The soup is just as good without bacon because the turkey sausage is so flavorful. Ingredients

2 Tbsp Extra Virgin Olive Oil
1 lb Jennie-O Sweet Italian Turkey Sausage
4 crispy cooked pieces of Turkey Bacon
4 Cups Low Sodium Chicken Broth
2- large or 3-small red potatos, thinly sliced
1 Cup heavy cream (not whipping)
2 Cups of chopped fresh kale, or as much as you want
1 tsp red pepper flakes
Directions
In a medium pan, heat 2 Tbsp of Extra Virgin Olive Oil. Open the casings of the Sweet Italian Sausage links and chop into crumbles while in frying in pan, when browned, set aside. Prepare 4 slices of Turkey bacon according to package, make it crispy and crumbly, set aside.
In a large stock pot, pour in 2 cups of low sodium chicken broth, Add thinly sliced potatoes and simmer until potatoes are fork tender. When potatoes are tender, add remaining 2 cups of chicken broth, turkey sausage, crumbled turkey bacon, and 1 cup heavy cream. Stir to mix and bring to low boil. Turn down to simmer and add 2 cups of chopped kale and 1 tsp of red pepper flakes. Simmer 15 min - ready to eat.
