    2 boneless, skinless chicken breasts (about 4 oz each)
    1 tbsp extra virgin olive oil
    1 cup (uncooked) Rice Select Royal Blend rice
    1 can (10.5 oz) 98% Fat Free Cream of Mushroom soup
    1 can (6 oz) mushroom pieces (drained)
    Chicken seasoning to taste


1. Heat oil in skillet
2. Place chicken breasts in oil and sprinkle chicken seasoning over top. Brown for 3-5 minutes then flip over, sprinkle seasoning again and brown another 3-5 minutes.
3. While chicken is browning, pour rice, soup, mushrooms and about 1/2 tsp of chicken seasoning in a 2 qt. covered casserole dish.
4. Add 1 1/2 soup cans of water to rice mixture and stir to mix well.
5. Add chicken breasts to casserole dish, making sure to spoon some of the rice mixture over top.
6. Cover & bake at 350* for 45 - 60 minutes until rice is cooked.

  • Just made it tonight and only with one exception...threw some pan fried quartered brussel sprouts into the mix and then topped the dish with crumbled bacon. The added ingredients AREN'T NECESSARY as the dish stands alone. - 7/3/15
