My husband is crazy about really spicy hot mexican food. you can control the heat in this recipe by substituting a mild taco seasoning and plain diced tomatoes instead of the ones with diced chiles. Ingredients

2 lbs. Eye of Round Steak, cut into 1.5" strips
2 Pkgs Hot Taco Seasoning
1 Medium Onion diced
1 Medium Green Pepper Diced
1 can Diced Tomatoes with Green Chiles WELL DRAINED!
1 Tbsp Cider Vinegar

10 - 8" flour Tortillas
Sour Cream
Shredded Mexican style Cheese
1 Can Refried Beans
Directions
Place beef, taco seasoning, onion, and green pepper in crockpot and toss to coat. Add vinegar and diced tomatoes and stir. Cover and cook for 6-8 hrs on low. Shred beef with forks and Stir into remaining liquid in the crockpot.
Spread 2 Tablespoons of Refried beefs onto tortilla, Spoon cooked beef into the center of a tortilla, top with cheese and sour cream, fold in edges and roll. Serve with a side of Brown Rice (not included in Nutritional info).
