Ingredients

    3 Chicken Breast, no skin
    1 tbsp Curry powder
    1 box Couscous 10oz box
    6 piece chopped Sun Dried Tomatoes
    2 cups plus 2 tbsp Chicken Broth

Directions

Cut the chicken breast into bite size pieces. Place curry powder into a zipper seal bag then drop the chicken pieces in and shake up to coat. Brown the chicken in a pan. Once the chicken is done, deglaze the pan with the 2 tbsp of chicken broth. While the chicken is cooking, bring the other 2 cups of chicken broth, sundried tomatoes, and olive oil to a rapid boil. Add the couscous and cover. Remove from the heat and let set for 5 minutes. Serve chicken over the couscous. Makes 4 servings.

    Very Good
    Taste like more - this dish is not spicy hot. This was the first time we cooked with Curry powder, to add some heat - we will add some cayenne pepper, red peppers, or something. We will make this dish several more times - 5/13/09
